Veggies. They forced us to eat it as a kid and now as an adult you’re still kind of skeptical about eating them. Sure sure, they’re a powerful source of nutrients and vitamins…but have you tasted some of them?! LOL! It took me a minute to try some of the vegetables that I now love and trying to get hubby who’s favorite food group is cheese and egg sandwiches, I knew I had to figure out a way for us to get more veggies in our diets but most importantly we had to learn to love them.
Below are some of the foods I was able to hide our veggies in. Not only was the dish tasty, but it was much healthy than it’s fattier, cheese laden, or sugary counterpart.
Definitely check out some of these recipes if you yourself aren’t huge on vegetables, you have a picky eater in your household, or you want to try something new with your recipes!
As you are preparing your normal spaghetti, add a cup of chopped spinach, half a chopped onion, a minced clove of garlic, a whole chopped medium tomato and whole chopped zucchini to the mix
Smoothies are a great way to drink you meal on the go. One of my favorite smoothies includes: 1 cup of coconut water, 1/2 cup of aloe vera juice, 1 green apple, 1 medium banana, 1 cup raw spinach, 1/2 cup of raw kale leaves blended until smooth.
Carnivores don’t come for me! It really is a great way to either hide your veggies or go meatless…*hides from stones* Some of the best vegetables to use in your grounded meat are: bell peppers, onions, spinach (notice a trend?), sun dried tomatoes.
There’s a multitude of ways you can prepare the lasagna. You can use zucchini as your noodles, you can add fresh tomatoes, definitely spinach, spring vegetables like zucchini and squash plus carrots and eggplant are all excellent vegetables to add to this dish!
If you enjoy making smoothies, making a natural juice is just as easy…easier if you have a juicer, but if you don’t try this on for size: 3 large carrots boiled for 5 minutes and minced, 1 cup orange juice, 1 mango, 1/2 guava juice, raw ginger, 1/2 cup pineapples blend baby blend!
I’m not sure about you, but when I think of soup I only think of hearty vegetables. Take the canned vegetable soup variety to the next level by adding fresh cut potatoes, celery, kidney beans, kale, and cut carrots to the pot with extra vegetable stock and let simmer…if you have a crockpot/ slow cooker let it simmer on high for about 4 hours.
I’m new to the whole veggie sandwich thing…because a sandwich ain’t a sandwich without some meat! LOL! But I tried Jimmy John’s veggie sandwich and really loved it. Make your own with sourdough bread, avocado mayo or guacamole, romaine lettuce, cucumbers, tomato, and provolone cheese.
…duh! Amp up the healthy by adding grains like flax seeds and raw almonds, trade in iceberg for romaine and arugula and instead of drowning the whole thing in a fatty store bought dressing, make your own! Try these recipes!
