Recipe Box: Meatball Sammies

I just noticed, how much sandwiches run my life. I think this is my fourth…maybe fifth recipe box about a sandwich of some type and lest we forget the Skinny-wiches Must Dine post! Why are they so easy to make and so damn tasty!!! I also think I’m a closet Italian…but we won’t go over my love of pasta and pasta sauce either. Enter my latest kitchen creation…the meatball sammie!!!!

It’s like the hoagie took a trip to Italy and got all fancy.

Serving size: 6

Prep time: 15 minutes

Cook time: 30 minutes

Hawaiian Sweet Rolls Hoagies

Your favorite pasta sauce (I used traditional Prego)

Mozzarella or Sharp Cheddar cheese

1 pound ground turkey (you know I don’t do the beef)

1 tablespoon of butter

Olive oil

Onion Powder

Garlic Powder

Half an onion (chopped)

One garlic clove (minced)

Parsley Flakes

Salt and Pepper

Heat skillet and coat with butter. Toast hoagie rolls and set aside.

In a medium sized bowl, add ground turkey, spices, chopped onions, and minced garlic. If you want to get real fancy, add a splash of red wine and mix all ingredients well.

Heat skillet on medium to high heat and coat with olive oil

Scoop 1/4 cup sized balls of meat (makes about 12-15) and add to skillet. Rotate balls every 3-5 minutes to cook thoroughly. Add pasta sauce and reduce heat. Cover with lid and let simmer for 10-15 minutes.

Assemble sandwiches by first adding cheese, then sauce, then meatballs, then cheese, topped with more sauce.

Eat and enjoy!

**Tastes great with kettle chips or veggie chips!**
