Recipe Box: Twice Baked Potatoes

I have to say, when it comes to making dinner…I make it look gooooooooooood! I made this as a part of dinner on Wednesday. Originally I was just going to make your regular ole mashed potatoes, but I got inspired to do something more. I whipped out the Allrecipes app on my phone and found exactly what I was looking for: twice baked potatoes. Naturally, I made it my own and certainly you can too. Recipe Box: Twice Baked Potatoes via SOA Inspired

Ingredients:

4 large baking potatoes or 8 small to medium potatoes

1/2 cup sour cream

1/2 cup milk (I only use Almond milk in my house)

2 Tbsp butter

1/2 teaspoon salt

dash of pepper

1 cup of shredded cheddar cheese, divided in half

1/4 cup parsley flakes

Optional toppings:

bacon bits

green onions

chunky salsa

parmesean cheese

red pepper flakes

chopped sausage

bleu cheese crumbles

Directions

Preheat oven to 350°

Bake potatoes for approximately 1 hour (tip: I submerged my potatoes in cool water for about 10-15 minutes prior to putting them in the oven wet. They cooked for about 30 minutes)

Twice Baked Potatoes

When potatoes are done let them cool for about 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save the skins.

In large bowl with potato flesh, add sour cream, milk, butter, salt, pepper, and 1/2 cup cheese. Mix with hand mixer until slightly chunky and well blended.

Spoon mixture into potato skins. Top with remaining cheese, parsley flakes, and any other ingredients and cook for an additional 15 minutes, or until cheese is melted.

Let cool and enjoy!
